Raw Beetroot Hummus

This is one of FoodByMaria’s most versatile recipes yet – raw beetroot hummus. It is a great raw, vegan, and dairy free snack option. Put it on toast, add it to a sandwich, or put it on your favorite veggie snack.

 


PREP TIME: 5 minutes
TOTAL TIME: 5 minutes

INGREDIENTS

  • 1 can of chickpeas, washed and strained
  • 1 bag of thawed beets
  • 5 cloves of garlic
  • 3 heaped tbsp of tahini
  • 3 tbsp of EVOO
  • 1 splash of red wine vinegar
  • Juice from one lime
  • 1 tbsp red pepper
  • 1 tsp salt
  • 1 tbsp super beets

INSTRUCTIONS

  1. Into a food processor combine all the ingredients apart from the EVOO and pulse. Once your hummus becomes smooth begin to pour in the EVOO from the top of the food processor. This method will keep it serious richness, and a smooth consistency!
  2. Thats it! You are done!
