Cranberry Almond Beet Cookies

INGREDIENTS:

•1 tablespoon of SuperBeets Collagen⠀
•1 tablespoon water⠀
•1 egg⠀
•1 teaspoon vanilla extract⠀
•⅓ cup honey⠀
•1/4 cup olive oil⠀
•1 tablespoon lemon juice⠀
•1 teaspoon baking powder⠀
•1 1/4 cup almond flour⠀
•1/4 cup unsweetened cocoa powder⠀
•3 tablespoons coconut flour⠀
•1/2 teaspoon flaky sea salt (plus extra for topping)⠀
•¼ cup slivered almonds⠀
•¼ cup dried cranberries⠀


DIRECTIONS:

1. In a medium bowl combine water and SuperBeets Collagen, stir to combine. To the same bowl add the egg, vanilla, honey, olive oil, and lemon juice, and whisk together until combined.⠀
2. In a large bowl, add the almond flour, coconut flour, cocoa powder, salt, and baking powder. Whisk until well combined.⠀
3. Add the liquid mixture bowl to the dry ingredients and mix until everything is well combined.⠀
4. Gently fold in the cranberries and almonds.⠀
5. Cover and refrigerate the dough for 60 minutes.⠀
6. While the mixture is in the fridge, preheat the oven to 350 degrees. Line a baking sheet with parchment paper.⠀
7. Scoop out 1 tablespoon of the dough at a time, rolling each into a ball with your hands. If the batter is too sticky, wet your hands lightly with water before rolling the batter into balls. Space evenly onto the baking sheet and flatten slightly with a fork. ⠀
8. Bake for 11-12 minutes. Let the cookies sit on the pan for about one minute before moving to a cooling rack.⠀
