Vegan Carob Avocado Mousse Parfait

Another incredible energy-packed snack from the the Mother & Daughter team behind Crowded Kitchen on Facebook & Instagram!

Layers of velvety carob mousse, sweet Pitaya berry jam with SuperBeets Black Cherry Beetroot Powder & Coconut Yogurt topped with chocolate chips, cinnamon hemp bites, cinnamon, & coconut flakes. Recipe below:

Carob Avocado Mousse

  • 1 avocado
  • 4 tbsp coconut or other non dairy milk
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 3 tbsp Sunfood Carob Powder
  • pinch of Sunfood Pink Himalayan Crystal Salt
  • 1 tsp Sunfood Acai powder
  • 1 tbsp maple syrup
  • Blend all ingredients well until smooth and creamy.

Pitaya Berry Layer

  • 1 packet Pitaya Plus
  • 1/4 cup each of tart cherries and raspberries
  • 1/4 tsp SuperBeets Black Cherry Powder
  • 2 tbsp chia seeds

Let berries and pitaya thaw to room temp. Then blend briefly until mixed well with beetroot powder. Add chia seeds and stir. Stir again after 5 minutes to prevent clumping. Let thicken at least 30 min. Any leftovers may be used as jam.

Yogurt Layers

  • 1 5.3oz container of So Delicious Dairy Free Vanilla Coconut yogurt
  • 1/2 tsp Sunfood Carob Powder
  • 2 tbsp chia seeds

Mix together well. Stir again after 5 min and let sit for at least 20-30 min.

Layer all of the above however you wish in a mason jar or glass. Top with dollop of vanilla yogurt and Enjoy Life Foods chocolate chips, coconut flakes, cinnamon hemp bites from Manitoba Harvest Hemp Foods, dust lightly with cinnamon, and enjoy!!
